Spiced Berry Crêpe Recipe

Makes: 6 (serves 2)

Time: 20 minutes

You’ll need:

For the crêpes:

40g oats or oat flour

50g buckwheat groats or buckwheat flour

½ tsp cinnamon

½ tsp mixed spice

½ banana (50g)

180ml almond or oat milk

1 tsp cashew or almond butter

1 tbsp maple syrup

Oil of your choice (we used sunflower) for frying

For the spiced berries:

250g mixed berries, fresh or frozen

½ tsp cinnamon

½ tsp mixed spice

1 tbsp maple syrup

2 tbsp water

To serve: coconut yoghurt, extra maple syrup, cacao nibs, desiccated coconut

Here’s how:

1. To prep the spiced berry topping, add the berries to a small saucepan with the cinnamon, mixed spice, maple syrup and water. Heat over a medium-high heat, stirring occasionally for 10 minutes until the berries have broken down and start to caramelise.

2. Next, add all the crêpe batter ingredients to a blender and blend until smooth and creamy, making sure there are no lumps.

3. Heat a non-stick frying pan with a little oil and once hot, spoon in 2-3 tbsp of the crêpe batter and spread it around to form a larger circle – keep it thin so they are less chunky than pancakes! The heat should be medium-high, and take care to not let the oil burn!

4. Allow to cook for a couple of minutes until the edges begin to come away from the side of the pan, before carefully flipping over to cook the second side for roughly 1 minute.

5. Transfer to a plate and repeat! This recipe will make about 6 crêpes.

6. Finally, serve the crêpes with the spiced berries, some coconut yoghurt and any other extra toppings you’d like - we love maple syrup, cacao nibs and desiccated coconut!
